Tofuyo is a fermented food made by aging shima tofu (Okinawan firm tofu) for several months in red koji, rice koji, and awamori, producing a rich flavor and creamy texture sometimes likened to cheese — a delicacy handed down from the Ryukyu Kingdom. It is said to have been created around the 18th century, when the Ryukyu royal government's culinary bureau refined a method for fermented tofu ('furu,' known in China as fu-ru) introduced from China, and at the time it was treasured as a noble delicacy reserved for the upper classes. Unlike the salt-cured fu-ru of China and Taiwan, tofuyo differs significantly in that it is aged in awamori, a spirit familiar to Okinawa. Fermentation is believed to involve Monascus mold and koji fungi, giving the food its distinctive flavor. Today it is typically enjoyed in small amounts, taken with chopsticks as an accompaniment to awamori, and remains a popular Okinawan fermented food and souvenir item.

Origin

Tofuyo is thought to have been created around the 18th century, when the Ryukyu royal government's culinary bureau refined fermented tofu ('furu') introduced from China. The method is said to have arrived during an era when the Ryukyu Kingdom, under investiture from Ming-dynasty China, engaged in active trade, and it was initially developed as a court dish.

History

Chefs of the Ryukyu royal government pursued a distinctive flavor while preventing spoilage, using rice koji and salt of Japanese origin together with local awamori. Whereas the fu-ru of China and Taiwan is salt-cured to improve keeping quality, tofuyo developed into a method of aging in awamori, a spirit familiar to Okinawa, and during the kingdom era it was cherished as a noble delicacy available only to the upper classes.

Features

Its defining feature is aging shima tofu for several months in red koji, rice koji, and awamori. Fermentation is believed to involve Monascus mold and koji fungi, producing a rich flavor and creamy texture reminiscent of cheese or other fermented foods. It is typically eaten in small amounts, picked up with chopsticks and paired with awamori.
