Rakkasei Miso

Rakkasei Miso (Peanut Miso) 1

Rakkasei Miso (Peanut Miso) is a local specialty enjoyed around Yachimata City, Chiba Prefecture, Japan's leading producer of peanuts. Raw peanuts with their skins still on are slowly roasted over low heat, then kneaded together with miso, sugar, and sake to create a sweet-and-savory miso paste eaten daily as a side with rice, a tea snack, or an accompaniment to sake. Peanut cultivation began in Yachimata City in the Meiji era, and the area developed into a leading production center from the Taisho to Showa periods. Along the way, many peanuts that did not meet market standards went unsold. Rakkasei Miso is said to have been devised by local farmers as a way to make good use of these peanuts rather than let them go to waste. Today it is made not only at home but also served in school lunches and sold as a packaged product at local peanut specialty shops and roadside stations, firmly established as one of Chiba's representative preserved foods and local specialties.

Origin

Rakkasei Miso is said to have been devised by farmers in the production area as a way to avoid wasting peanuts that could not be shipped to market because they did not meet size or shape standards. Only high-quality, large peanuts were shipped out, and it is said that the practice began when households processed the leftover cracked or small peanuts into miso instead.

History

Peanut cultivation in Chiba Prefecture began in the Meiji era, and the area around Yachimata City developed into a leading production center through the Taisho era. As production increased, making use of substandard peanuts became an important issue, and the practice of combining them with miso to create a long-lasting processed food is said to have spread among local households.

Features

Raw peanuts with their skins still on are slowly roasted over low heat to bring out their aroma, then kneaded together with miso, sugar, and sake. The sweet-and-savory flavor pairs well with rice, and because it keeps relatively well even at room temperature, it is also valued as a preserved food.
