Saga Beef is a branded beef designation reserved for Japanese Black cattle raised within the JA Group Saga area that meet strict standards set by the Japan Meat Grading Association: a meat quality grade of 4 or higher and a BMS (Beef Marbling Standard) number of 7 or higher. This rigorous system, under which only cattle meeting these standards may be called 'Saga Gyu,' consistently delivers finely marbled, tender meat. The brand traces its origins to 1984, when beef bearing a 'Saga Gyu' label was sold at a meat market in the Kansai region, and the trademark was registered in 2000. Nationally, Saga Beef is known for its stringent grading standards, sometimes described as second only to Sendai Beef in strictness, and it has grown into one of Saga Prefecture's leading culinary brands. Following the 2007 merger that formed JA Group Saga, the brand was expanded to cover all Japanese Black cattle raised within the JA Saga area, establishing a system in which quality is managed under unified standards regardless of production area or producer.

Origin

Saga Prefecture has long been known for livestock farming, blessed with a mild climate and abundant water. In 1984 (Showa 59), Japanese Black beef produced in Saga Prefecture was sold at a meat market in the Kansai region bearing a 'Saga Gyu' label, marking the origin of Saga Beef as a brand. From then on, efforts were made to raise the region's reputation as a production area by establishing unified branding standards.

History

In 1988, a system of designated retailers was established, and in 2000 'Saga Gyu' was registered as a trademark. In 2004, the grading standards were revised, and the current classification based on meat quality grade and BMS number was adopted. Since the founding of JA Saga in 2007, the brand has covered all Japanese Black cattle raised within the JA Group Saga area, with quality managed under unified standards.

Features

Only Japanese Black cattle raised by producers within the JA Group Saga area, and graded by the Japan Meat Grading Association at meat quality grade 4 or higher with a BMS number of 7 or higher, may be called Saga Beef. It is characterized by fine marbling, tender meat, and refined, subtly sweet fat, with the brand's quality supported by grading standards considered strict even by national standards.

Food Culture

In Saga Prefecture, a culture of enjoying Saga Beef through a variety of cooking methods — steak, shabu-shabu, yakiniku, and more — is well established, and it is also popular as a gift item and as a furusato nozei (hometown tax) return gift. Restaurants operated by JA Saga, along with specialty shops throughout the prefecture, promote the appeal of Saga Beef.
