Hokki-meshi (Surf clam rice) 1

Hokki-meshi is a rice dish cooked with large, richly sweet surf clams (hokkigai) landed at Matsukawa-ura (lagoon) in Soma City, Fukushima Prefecture. The waters off Soma and Futaba are mineral-rich fishing grounds where surf clam fishing has flourished since the Meiji era. The dish combines Soma's high-quality rice—the area is also known as a rice-growing region—with locally caught surf clams, and is said to have originally been enjoyed as a quick 'fisherman's meal' eaten aboard boats between hauls by busy fishermen. The rice, fragrant from soaking up the clams' umami, offers the sweetness and crunchy texture of the clams, and is served at eateries and direct-sale market cafeterias around Matsukawa-ura. As a dish that makes the most of the bounty of Matsukawa-ura, Fukushima's only lagoon, it has become a staple menu item for welcoming visitors locally, and quite a few restaurants serve it as a seasonal offering.

Origin

Soma City has long been an area known for rice farming, and at the same time, Matsukawa-ura (lagoon)—Fukushima's only lagoon—has been a fishing ground where surf clams are abundant. Surf clam fishing has taken place off Soma and Futaba since the Meiji era, and Hokki-meshi was born as a dish combining the area's two local specialties: rice and surf clams.

History

Around Matsukawa-ura, where fishing once flourished, it is said that surf clam rice was eaten as a quick meal aboard boats by busy fishermen. Surf clams grown in the mineral-rich waters off Soma and Futaba became known for their large size and strong sweetness, and the dish gradually became established throughout the region as both a home-cooked meal and a restaurant menu item.

Features

The basic method is to simmer surf clams in a seasoning liquid of soy sauce, sake, and similar ingredients, then cook the rice in that broth. Because the clams become tough if overcooked, a common technique is to add them after the rice has finished cooking and then let it steam. Finishing the dish with shiso leaves or shredded ginger brings out the surf clam's distinctive aroma, letting diners enjoy rice that has fully absorbed the clams' umami along with their crunchy texture.

Food Culture

It has traditionally been eaten at restaurants and homes around Matsukawa-ura, mainly from around June to November when surf clams are in season. Having originated as a meal eaten aboard fishing boats, it survives today as a practical local dish that is quick to make and satisfying to eat.

How It Differs from Home Cooking

At home, the dish is often made simply using pre-shelled clams bought at the store, but eateries around Matsukawa-ura use freshly landed surf clams still in the shell, adding the cooked clams to rice that has been cooked in the simmering broth, making the most of the clams' texture and aroma.
